Here’s everything you need to get cooking 🧑‍🍳👇 SERVES: 2 PROTEIN: 40g INGREDIENTS: 1 pack of VFC Chick*n Sausages (40g protein) 1 red onion 3 cloves garlic 1 carrot 3 asparagus stems 4 tenderstem broccoli 400g tinned butter beans Salt & pepper For the creamy sauce: 300g silken tofu 3 tbsp nutritional yeast 3 tbsp toasted sunflower seeds Juice from half a lemon Top with: Handful of pickled red onion Fresh basil METHOD: 1. Start by adding a drizzle of olive oil to a deep pan, fry off the chopped onion, garlic, and carrots for around five minutes before adding the butter beans 2. Add salt and pepper to taste then add in the Chick*n Sausages and fry off each side for a few minutes until the skin gets nice and crispy. 3. Prepare the creamy sauce by adding the silken tofu, nutritional yeast, and toasted sunflower seeds to a blender and pulse until smooth. Add to the pan with the sausages (option to take the sausages out of the pan to keep the skin nice and crispy, add back at the end). 4. Loosen the mix with a small splash of water and add in the tenderstem broccoli and asparagus, heating until they’re lightly cooked. 5. If you removed the sausages, add them back into the pan for the final few minutes, and top with fresh basil, season to taste, and enjoy!
